Fish For Breakfast

We don't think of fish and seafood as breakfast foods but it is an option too delicious to ignore. Most well known, of course, is shrimp and grits. A southern favorite for many years, shrimp and grits recipes vary from region to cook. I'll include videos for some of the best of these. Following are some interesting breakfast ideas using your favorite fish. Breakfast doesn't have to be boring anymore.
New Orleans Style Crab and Eggs
Ingredients
1 can of crab meat, drained
6 medium eggs
2 tbsp. of butter
white pepper
salt
paprika
6 English muffins, split and toasted
For sauce
3 tbls. of butter
3 tbsp of flour
1 1/4 cup of milk
1/2 tsp of nutmeg
2 tsp of brandy
couple of dashes of hot sauce
Directions
Make the sauce by melting the butter in a skillet over low heat. Add the flour and stir until smooth. Cook for about a minute, stirring constantly. Slowly add the milk, stirring all the while. When thickened, add the remaining ingredients and stir until creamy. Lightly saute crab meat in butter. Use salt and white pepper to taste. Poach eggs. Spoon a good amount of crab meat onto English muffin half. Top with poached egg and sauce.

Smoked Salmon Eggs Benedict
Ingredients
1/4 cup of softened butter
2 tbsp of chopped fresh dill
2 tbsp of finely chopped green onions or chives
salt and pepper to taste
1 tsp of lemon zest
4 eggs
2 English muffins cut in half and toasted
sliced smoked salmon
1/2 tsp of cayenne pepper
fresh dill sprigs
Directions
Mix together butter, dill, green onions, lemon zest and salt and pepper to taste. Set aside. Poach the eggs (see video below). Spread butter mixture onto English muffin halves. Top with smoked salmon and then a poached egg. Sprinkle with salt and pepper and garnish with a dill sprig.
Scrambled Eggs And Fish Pita
Ingredients
4 oz. of tilapia, haddock, swai or other white fish
2 eggs or egg whites
1/4 cup of chopped tomatoes
salt and ground white pepper to taste
1/4 cup of canned chopped green chile peppers
chopped parsley
whole grain pita bread cut in half
Directions
Spray a frying pan lightly with cooking oil. Season fish with white pepper and salt to taste. Cook fish until done, turning once or twice. After the fish is cooked, dice it up into bite-size pieces and return to pan. Add eggs (or egg whites), chile peppers, tomatoes and parsley. Scramble until done. Serve in pita halves. You can add salsa sauce (hot is good) for flavor to this healthy breakfast.
Eggs and Tomato Sardines
Ingredients
1 can of tomato sardines
1/2 clove of garlic crushed
2 eggs
1 tsp lemon juice
1/4 cup of chopped onion
crusty French bread
soy sauce
Directions
Lightly saute tomato sardines with garlic, onions and lemon juice. Meanwhile fry eggs over easy (or medium if you like the whites cooked). When done, scoop sardine mixture onto crusty French bread and top with eggs. Use soy sauce to taste. This is easy and delicious.
