Smoked Trout Appetizers

Smoked trout is something special. Full of flavor and often local, smoked trout is always a crowd-pleaser. It is naturally rich and blends well with unusual combinations. Experimenting with these combinations will often yield great results. Try different crackers or add a variety of vegetables. Use an assortment of spreads until you find the right one to please your palate. Remember, if it tastes great to you it will likely taste great to your family or guests too. Here are some simple ideas.
Smoked Trout With Mint Jelly
Ingredients
1 package of smoked trout
1 jar of mint jelly (you can find this where other jams and jellies are sold)
whipped cream cheese
1 box of vegetable or garlic crackers
Directions
Spread a good amount of the cream cheese on a cracker. Add a piece of the smoked trout. Dab a little cream cheese on top and spoon on some mint jelly. Arrange on a platter and serve.

Smoked Trout Dip
Ingredients
1 package of smoked trout
1/2 cup of whipped cream cheese
1/2 cup of sour cream or plain Greek yogurt
1 tablespoon of fresh chopped dill
1 tablespoon of horseradish
1 tablespoon of chopped red onion
juice from half a lemon
dash or two of hot sauce
pita chips
Directions
Flake smoked trout into a bowl. Puree cream cheese, sour cream and horseradish in a blender or small food processor (can also be done by hand if necessary). Add trout and hot sauce and mix until smooth. Transfer to a bowl and blend in dill, onions and lemon to taste. Refrigerate for about an hour. Serve with pita chips for dipping.
Dijon Smoked Trout Deviled Eggs
Ingredients
6 large hard-boiled eggs
1 teaspoon of Dijon mustard
3 tablespoons of mayonnaise
lemon juice
Smoked trout
Black pepper
Chopped fresh dill
1 jar of sweet red peppers
Directions
Peel the eggs and cut them in half. Scoop out the yolks and place it in a small bowl. Add mustard, mayonnaise, lemon juice and black pepper to taste. Flake the smoked trout and add to the bowl. Mash all the ingredients together with a fork until creamy and smooth. Adjust pepper and lemon juice to your preference. Spoon yolk mixture into egg white halves and garnish with a bit of dill and a small slice of the sweet red pepper. You can also garnish with capers, sweet pickles or red onion.
Smoked Trout Roll-ups
Ingredients
1 package of tortillas (different flavors are available - try wheat or spinach or tomato basil, etc.)
1 package of smoked trout
1 container or package of softened cream cheese (plain, raspberry or smoky paprika, etc.)
finely chopped pepper (green or red)
finely chopped green onion
1 tomato, finely chopped
chopped fresh dill
Directions
Spread cream cheese liberally on a tortilla. Shred or finely chop smoked trout and sprinkle over the cream cheese. Add peppers, onions, tomatoes and dill making sure it's distributed evenly. Roll up tortilla and cut into slices. This is so easy and so good.
