Crab Meat Appetizers

Crab meat is simply delicious. Whether you use fresh, frozen or canned crab meat, you can put together some pretty amazing creations. Crab meat comes in different textures from the coveted lump to the versatile shredded. Appetizers using crab meat can be hot or cold.  There are endless options but I've tried to keep it simple and hope you enjoy these easy crab meat appetizer ideas.




Cheesy Crab Bites 


Ingredients


1/2 stick butter, softened
1 1/2 teaspoon of mayonnaise
1/2 teaspoon of garlic power
hot sauce
finely chopped green onion
1 (5 oz) jar of Kraft Old English cheese spread
1 (6 oz) can of flaked crab meat
1 package of English muffins


Directions


In a bowl, mix together all ingredients except the English muffins. Use hot sauce to taste, usually one or two drops will do. Cut English muffins in half and spread with the crab/cheese mixture. Place on pan under broiler (toaster oven works too). Watch it carefully so not to burn just until bubbly. When cool enough to handle, cut each muffin into quarters. These freeze well and can be heated in the microwave.












Crab Quichettes


Ingredients

1 package (8 oz.) of cream cheese, softened

1 package of Pillsbury Recipe Creations refrigerated dough sheet
1/2 cup of sour cream or plain Greek yogurt
2 eggs
3/4 cup of grated Parmesan cheese
2 cans of crab meat, drained
1/2 cup of finely chopped cooked broccoli
1/2 cup of finely chopped green onions
salt and pepper to taste


Directions


Preheat oven to 350 degrees. Unroll your dough and press it into an ungreased 13 X 9-inch pan to form a crust. In a medium bowl, beat cream cheese until fluffy then add sour cream and eggs and beat again. Add broccoli, onions, crabmeat, 1/2 the cheese and salt and pepper to taste. (This is also good with some chopped sweet red pepper). Mix well and spread over the dough in the pan. Top with remaining cheese. Bake for about 35-40 minutes until edges are golden brown and center is set. Let cool for about 10 minutes. Cut into one inch squares and serve.













Gorgonzola Crab Dip


Ingredients


2 cans of crab meat (6 oz. each)
1 cup of crumbled Gorgonzola cheese
2/3 cup of softened cream cheese
1 tsp. of Worcestershire sauce
1 tbsp chopped sweet red pepper (from a jar)
3 tbsp of mayonnaise
garlic powder to taste
2 tsp. of fresh lemon juice
1 tsp of Old Bay seasoning
1 tsp. of red pepper flakes
chopped green onions for garnish
milk or cream for thinning


Directions


In a medium bowl, beat together the Gorgonzola, cream cheese and mayonnaise. Add a little milk or cream to thin it out if necessary. Add garlic powder, Worcestershire sauce, lemon juice, Old Bay, chopped red pepper and pepper flakes. Stir until mixed. Fold in the crab meat. Transfer to a clean bowl, cover and refrigerate for about one hour. Serve with tortilla, crackers or pita chips.

Cranberry Crab Tarts


Ingredients


2 cans of crab meat
1 cup of whipped cream cheese
chopped green onions
1/2 cup of whole cranberry sauce
1/2 tbsp of horseradish 
1 package of mini fillo cups




Directions


Preheat oven to 350 degrees. Drain crab meat. In a medium bowl, mix crab meat, cream cheese, onions, cranberry sauce and horseradish until smooth. Spoon mixture into the fillo cups filling to the top. Arrange on a sprayed cookie sheet and bake for about 5-8 minutes. Let cool a little and transfer to a platter.
