Catfish

Catfish is much more versatile than you might think. It's great fried but the mild white meat can be enjoyed in very many ways. Always a southern favorite, catfish's light texture appeals to everyone, even those who don't like that "fishy" taste. Here are some simple delicious recipes that will make you fall in love with catfish all over again.
Dijon Baked Catfish
Ingredients
4 large catfish fillets
juice from one lemon
juice from one orange
seasoned salt
1/2 cup of spicy Dijon mustard
1 tsp. Worcestershire sauce
1 tsp. soy sauce
hot sauce to taste
2 tbsp. olive oil
1 thinly sliced red bell pepper
2 cloves of chopped garlic
1 onion, thinly sliced
Directions
Preheat oven to 350 degrees. Season both sides of the catfish fillets with the seasoned salt to taste. In a bowl, blend together orange juice, lemon juice, Dijon mustard, Worcestershire sauce, soy sauce and hot sauce to taste. Set aside. Heat the olive oil in a large skillet. Add fish and brown lightly, about 1-2 minutes per side. Spread the mustard sauce on both sides of the fillets and transfer into a baking dish coated with cooking spray. Arrange pepper and onion slices and garlic on top. Bake for about 15-20 minutes or until fish flakes easily when tested with a fork.

Easy Coconut Catfish
Ingredients
4 catfish fillets
2 tbsp. olive oil
2 cloves minced garlic
1 onion finely chopped
1 tsp. grated fresh ginger
1 jalapeno pepper, chopped
1 1/2 cup coconut milk
salt and pepper to taste
Directions
Heat olive oil in large skillet over medium heat. Add onions, garlic, ginger and pepper and cook about seven minutes until tender. Add catfish fillets. Season with salt and pepper to taste. Cover and cook for 3 minutes. Add coconut milk and stir. Replace cover and cook for about another 10 minutes. Great served with jasmine rice.
Mediterranean Style Catfish
Ingredients
4 catfish fillets
salt and pepper to taste
1 tbsp. lemon juice
1/2 cup fresh grated Parmesan cheese
2 tbsp. softened butter
1 1/2 tbsp. mayonnaise
1 tsp. dry Italian seasoning
1 can sliced mushrooms
4 thinly sliced roma tomatoes
Directions
Preheat oven to 400 degrees. Rinse and pat dry catfish fillets then brush both sides with lemon juice. Season with salt and pepper to taste. Place fillets on a sprayed baking pan. In a bowl, mix together Parmesan cheese, butter, mayonnaise, mushrooms and Italian seasoning. Bake fish for about 6 minutes then remove from the oven. Turn fillets over and spread cheese mixture evenly over each. Top with tomato slices. Bake for an additional 7-8 minutes until fish flakes easily when tested with fork.
Oven Fried Catfish With Lemon Sauce
Ingredients
1 carton of sour cream (8 oz.)
2 tbsp. fresh lemon juice
1/2 tsp. grated lemon rind
pinch of salt
1 tbsp. chopped fresh parsley
6 catfish fillets
salt and pepper to taste
cooking spray
1/4 tsp. garlic powder
1/4 tsp. ground red pepper
1 1/2 cup seasoned breadcrumbs
4 egg whites
Directions
Mix together sour cream, lemon juice, lemon rind, parsley and pinch of salt. Cover and refrigerate. Season catfish fillets with salt and pepper to taste. In a shallow bowl, combine breadcrumbs, garlic powder and ground red pepper. Whisk egg whites in a bowl until frothy.Take each fillet and dip it in the egg whites then dredge in the breadcrumb mixture until evenly covered. Place coated fillets on sprayed baking pan. Bake in 375 degree oven until fish is golden brown - about 20-25 minutes. Serve with lemon sauce.
