Haddock

Haddock is a firm white fish most often enjoyed fried. But preparing this wonderful mild fish does not have to be boring. Haddock is easy to work with and affordable to buy. It can be baked, broiled, sauteed and, of course, fried. Here are a few recipe ideas using haddock that will get you craving for more.
Burgundy Haddock
Ingredients
4 haddock fillets
3 tbsp. butter or margarine
2 tbsp. flour
salt and pepper to taste
1/2 cup minced yellow onion
1 cup chopped fresh mushrooms
2 tbsp. chopped fresh parsley
3 cups burgundy wine (other red wines can be used)
Directions
Season haddock fillets to taste with salt and pepper. Place fish into a deep saucepan. Add burgundy wine and onions. Bring to a boil over medium heat. Cover and simmer for about 20 minutes or until fish flakes easily when tested with a fork. Meanwhile, melt 1 tbsp. of butter in a saucepan. Add mushrooms and seasoning to taste and saute for about 15 minutes. Set aside. Carefully remove fish fillets from pan. Sift wine with fine sieve. Mix flour with a small amount of warm wine and stir until smooth. Add to the remaining wine in pan. Add butter and sauteed mushrooms. Cook sauce over medium heat for about 10 minutes, stirring constantly. The sauce doesn't have to be very thick. Replace the haddock fillets and warm through for another few minutes. Garnish with chopped parsley.

Grilled Soy-Lemon Haddock
Ingredients
4 haddock fillets
2 tbsp. melted butter or margarine
3 tbsp. soy sauce (reduced sodium is okay)
2 tbsp. lemon juice
1 tbsp. sugar
1 tbsp. minced fresh ginger
1 tbsp. Worcestershire Sauce
1 clove minced garlic
black pepper
lemon wedges
Directions
Rinse fish and pat dry. Combine melted butter, soy sauce, lemon juice, ginger, sugar, garlic, Worcestershire sauce and black pepper in a large plastic food bag or nonreactive bowl with lid. Add haddock fillets to the mixture making sure marinade is evenly distributed. Place in a shallow pan and refrigerate for at least one hour turning the fish occasionally. Remove haddock fillets from bag (or bowl) reserving marinade. Arrange the fish on sprayed cooking grate. Place lid on grill. Cook for about 8-10 minutes turning once with metal spatula and brushing often with marinade. Fish is ready when opaque or flakes easily when tested with a fork. Serve with lemon wedges.
Mustard Tarragon Haddock
Ingredients
4 haddock fillets
2 tbsp. white wine vinegar
1 tbsp. dijon mustard (or other dark mustard)
1/2 tbsp. chopped fresh tarragon
1/8 tsp. white pepper (or to taste)
Directions
Whisk vinegar, mustard, tarragon and a good amount of white pepper in a bowl. Rinse haddock fillets and pat dry. Pour the marinade into a large sealable plastic bag. Add the fish fillets making sure they are covered evenly by marinade. Lay in shallow pan and refrigerate for 15 minutes or more. Remove fillets and arrange in a sprayed baking pan, overlapping thin areas. Drizzle with remaining marinade. Bake uncovered in a preheated 425 degree oven for about 10 minutes. Fish is ready when it flakes easily when tested with a fork.
Easy Cheesy Baked Haddock
Ingredients
4 haddock fillets
1 can condensed cream of celery soup
salt and pepper to taste
1 medium yellow onion, thinly sliced
1 cup shredded Cheddar cheese
Directions
Preheat oven to 350 degrees. Liberally spray a deep glass casserole dish with cooking spray. Season fillets with salt and pepper to taste. Place haddock fillets on the bottom of prepared dish. Layer onion slices over the fish. Top with cream of celery soup, spreading evenly. Sprinkle cheddar cheese on top of this. Bake for about 40 minutes until slightly bubbling. Fish should flake easy when tested with a fork.
