Smoked Salmon Appetizers

There's nothing simpler to work with than smoked salmon and it is always a crowd-pleaser. Smoked salmon comes in a variety of flavors and textures - all of them tasty. With some creative experimenting and little effort, you can put together some pretty impressive and delicious appetizers. Rolled Smoked Salmon Bites
Ingredients
Thin-sliced smoked salmon (lemon pepper flavor is good)
green onions chopped
fresh dill finely chopped
whipped cream cheese
rosemary and olive oil Triscuit crackers
Directions
Separate smoked salmon slices and lay flat on cutting board. Spread whipped cream cheese on slices. Sprinkle chopped dill and chopped green onions evenly over cream cheese. Roll salmon slice up on the long side so it will look like a tube. Cut into 1/2 inch pieces. Spread a little cream cheese on a Triscuit and place roll on it. The cream cheese should hold it in place so no toothpick will be necessary. You can adjust the amount of green onions and dill to your preference. This is a great taste combination. Enjoy.

Smoked Salmon Tomato Cups
Ingredients
Cherry tomatoes
8 oz. smoked salmon
1/2 cup sour cream
1/3 cup chopped fresh cilantro leaves
2 teaspoons of fresh lime juice
1 tablespoon of lime zest
salt
cayenne pepper
Directions
Cut small slice off the bottom of the cherry tomato so it will sit level. Cut the tops off. using a melon baller, scoop out centers to make a cup. Sprinkle insides with salt then invert on a paper towel to drain. Flake the smoked salmon into a medium-sized bowl. Make sure the salmon is flaked into small pieces. Blend in the sour cream, lime juice, chopped cilantro, lime zest, salt and cayenne pepper to taste. Mound the smoked salmon mixture into the cherry tomato cups. Top with a sprinkle of cayenne pepper and a small slice of lime peel. Arrange on an oval platter. A bed of lettuce underneath adds a nice touch.
Smoked Salmon Mini Sandwiches on Pumpernickel
Ingredients
Minced green onion
Minced fresh dill
1 tablespoon of capers, drained
1/4 cup mayonnaise
1 teaspoon of spicy horseradish
black pepper to taste
soft butter or margarine
1 package sliced smoked salmon
pumpernickel bread
thin sliced cucumber slices (better when cucumber is peeled first)
Directions
Combine onions, dill, mayonnaise, capers, horseradish and black pepper in a bowl. Butter pumpernickel bread slices well. spread mayonnaise mixture on each slice. Place thin cucumber slices and smoked salmon on a bread slice and top with another bread slice making a sandwich. Cut into about 1 inch square mini sandwiches. Place each sandwich bite in cupcake paper cups or arrange on a platter. You can put a toothpick in them for easy handling.
Easy Melba Toast Smoked Salmon
Ingredients
1 box of Melba toasts
Whipped cream cheese
1 package sliced smoked salmon
Thinly sliced red onion
1 jar capers
Directions
Spread Melba toasts with cream cheese. Top with a suitable size piece of smoked salmon. Press in several capers into any exposed cream cheese or add a little cream cheese on top of the smoked salmon for holding. Top with a thin slice of red onion and arrange on a platter.
