We should all eat fish at least a couple of times a week. The health benefits are numerous but best of all is that it tastes good too. With just a little bit of experimentation, you can create meals and appetizers you'll be proud to serve. Following are a few more ideas that are easy to prepare and even better to eat. Easy Garlic And Lime Steelhead Trout
Ingredients
4 steelhead trout fillets
2 limes
4 large cloves of minced garlic
4 tbsp. butter
cooking spray
Directions
Preheat oven to 350 degrees. Line a baking sheet with aluminum foil and spray well with cooking spray. Place trout fillets on prepared foil and spread 1 tbsp. of butter evenly over the top of each fillet. Cover the buttered fillets generously with lime zest. Then spoon minced garlic evenly over each piece of fish. Cut limes in half and squeeze juice over all. Cover with foil and bake for about 30 minutes or until fish flakes easily when tested with a fork.

Easy Lobster Rangoons
Ingredients
1/2 lb. cooked lobster meat
1 lb. cream cheese
1 cup finely chopped green onion
1 tbsp. chopped pimento
1 tbsp. finely grated fresh ginger
24 wonton wrappers
cooking oil for frying
Directions
In a bowl, mix together softened cream cheese, onion, pimento and ginger. Blend in lobster meat. Fill wonton wrappers with a generous teaspoon of the cream cheese lobster mix. Moisten the edges of the wrappers with water and fold in half to form a triangle. Press down to seal the edges. Lift the two sides of the folded wontons and curl over the top. Heat oil in a pan to 375 degrees. Fry prepared wontons a few at a time turning once. Remove when they turn golden brown. Drain on a paper towel. Great serves with Chinese mustard and duck sauce.
Squid (calamari) is often enjoyed fried but can be prepared in a variety of ways.
Seafood Stuffed Calamari
Ingredients
12 squid tubes ( available frozen - if you have to buy tentacles too - just separate and set aside)
1/4 cup finely chopped green pepper
1/2 cup finely chopped celery
1/2 cup finely chopped green onion
5 cloves of garlic, minced
8 oz. chopped shrimp
8 oz. chopped crabmeat (canned or imitation is okay)
2 tbsp. olive oil
2 cans tomato sauce
juice from 1/2 lemon
1 tsp. oregano
1 tsp. black pepper
1 tsp. thyme
1/3 cup cooking wine
1 lb. angel hair pasta, cooked and drained
squid tentacles, finely chopped (if you have them)
Directions
Preheat oven to 350 degrees. Rinse off squid and pat it dry with a paper towel. In a bowl, mix together chopped onion, garlic, pepper and celery. Add 1/3 of this mixture to crabmeat, shrimp and chopped tentacles if you have them. Squeeze in the lemon juice and blend well. Using a small spoon, stuff this mixture into each squid tube and place in sprayed baking pan. In a skillet, heat olive oil and saute the remaining vegetables until just soft. Add tomato sauce, wine, oregano, pepper and thyme. Simmer for about 15 minutes them pour over stuffed squid. Bake for about 15-20 minutes and serve over pasta with garlic bread.
Tuna steaks are grilling favorites. They are expensive to buy but worth it.
Easy Cajun Grilled Tuna Steaks
Ingredients
2 tuna steaks
1 tbsp. lemon juice
1 tbsp. olive oil
1 tbsp. Cajun seasoning (see video if you want to make your own)
Directions
In a bowl, mix together lemon juice, olive oil and Cajun seasoning. Place tuna steaks in a strong sealable plastic bag and add marinate. Turn tuna in the bag until steaks are well-coated on both sides. Place on plate in the refrigerator and marinate for about 30 minutes. Transfer tuna to preheated grill. Cook for about 5-6 minutes on each side. Tuna is best served still pink in the middle.
Halibut is appreciated by even the most finicky fish eaters. It is meaty and mild and can't be beat.
Baked Halibut With Blue Cheese And Onion
Ingredients
4 halibut fillets
1 bottle of good blue cheese salad dressing
1 small red onion, sliced thinly
blue cheese crumbles
Directions
Preheat oven to 350 degrees. Coat the bottom of a shallow baking pan with a thin layer of blue cheese dressing. Place halibut fillets on top making sure they are not touching. Put thin onion slices on top of each piece of fish then top with blue cheese crumbles. You can drizzle a little more of the dressing on top of that if you want. Bake in preheated over for about 20 minutes then check for doneness. Fish is cooked when it flakes easily when tested with a fork.
